Cauliflower Polonaise

1 large cauliflower
3-4 eggs
100g (╝lb) butter
About 4 x 15ml tbsp (4tbsp) breadcrumbs


Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 4


1. Trim cauliflower, rinse well in water and boil in lightly salted water, either whole or in sprigs.

2. Meanwhile hard boil the eggs, peel and coarsely chop. Sauté breadcrumbs until golden.

3. Drain cauliflower well and place on a hot serving dish. Sprinkle half the eggs over and pour butter mixed with breadcrumbs on top.
