Stuffed Meat Rolls

4 slices of pork
2 slices of bread
4 x 15ml tbsp (4tbsp) milk
2 onions
Pork dripping or butter
6-8 shallots
Salt, pepper
400-500ml (¾-1pt) beer (Pilsner or non-alcoholic)
1 bay leaf
1 sprig of thyme


Preparation time: 20 minutes
Cooking time: 60 minutes
Serves: 4


1. Slap meat lightly with the back of the hand and sprinkle with salt and pepper. Soak bread, crusts re­moved, in the milk.

2. Sauté chopped onion in 15g (½oz) pork dripping or butter and mix with the bread, 2-3 x 15ml tbsp (2-3tbsp) finely chopped parsley and 1-2 x 15ml tbsp (1-2tbsp) chervil. Season to taste.

3. Spread the stuffing on the meat slices, roll them up and tie with cotton. Sauté the rolls in butter or dripping in a heavy casserole. Sprinkle with nutmeg and add beer, bay leaf and thyme. Simmer, co­vered, for about 45 minutes.

4. Peel the shallots, place in cas­serole and continue to simmer until everything is cooked. Serve with white bread and spinach. See illustration overleaf.
