Potato Salad
( Salade De Pommes De Terre )


kg (1lb 10oz) firm potatoes
1 x 15ml tbsp (1tbsp) tarragon vinegar
Salt, pepper, chives
4-5 x 15ml tbsp (4-5tbsp) olive oil


Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 4


1. Wash potatoes and boil until tender without peeling. Pour off water, cover potatoes with cold water, and peel.

2. Slice potatoes while still warm, and sprinkle with a dressing of vi­negar, salt, pepper, snipped chives and oil. Allow salad to settle for a couple of minutes if you are serving it warm, turning the potato slices so that they are evenly covered by the dressing. For serving cold, place bowl of potatoes in a cool place for a couple of hours. Adjust seasoning before serving.
