Spicy Chilli Con Carne

Ingredients

1 onion
1 clove garlic
1 tbsp (15 ml) canola or vegetable oil
7 oz (200 g) ground beef
19 oz (540 ml) can red kidney beans
2 green jalapeño or serrano peppers
5 tomatoes
1 tsp (5 ml) dried oregano
Salt and freshly ground pepper
Sugar

Method

Chop the onion and garlic. Heat the oil in a large skillet. Stir in the onion and garlic, sauté on medium heat until translucent. Stir in the ground beef and brown for 10 minutes.


Seed and finely chop the jalapeño. Thinly slice the tomatoes. Drain the beans and stir into the ground beef along with the peppers, tomatoes and oregano. Simmer on low heat for 20 minutes. Season with salt, pepper and a little sugar.

TIP:- You can also make a meatless chilli. Broil (grill) 1 large red pepper in the oven or over the flame of a gas burner. Sprinkle with salt and cover with a damp towel. After 5 minutes, slip off the skin and chop coarsely. Sauté the onion and garlic as described above, stir in the red pepper, hot peppers, tomatoes and simmer for 20 minutes. Thicken with tomato paste and season with cayenne and basil.

Per serving:- approx. 533 calories, 45 g protein, 20 g fat, 43 g carbohydrates
