Quick Curried Lamb


3 tbsp butter
1 tbsp curry powder
1 clove garlic
1 large onion
450 g lean lamb, cut in 1-cm cubes
Salt and freshly ground black pepper


1. Melt the butter in a heavy frying pan over medium heat. Add the curry powder and stir for a minute or so.

2. Add the garlic, onion and lamb. Sauté, stirring frequently, for 7 minutes or so, or until the lamb is done through. Salt and pepper to taste and serve.

Yield:- 3 servings, each with 5 grams of carbohydrate and 1 gram of fibre, for a total of 4 grams of usable carbs and 31 grams of protein
