Thyme Perfumed Lamb Steaks


1 lamb steak (170 to 225 g)
2 tsp olive oil
2 tsp lemon juice
1 tbsp fresh thyme leaves, stripped from their stems


1. Rub each lamb steak with the olive oil and then the lemon. Cover the lamb with the thyme leaves, letting them stand for at least a couple of hours, so the thyme flavour permeates the lamb.

2. Grill close to the heat for 4 to 5 minutes per side, or barbecue.

Yield:- 1 serving, with 1 gram of carbohydrate, a trace of fibre and 30 grams or so of protein
