Zesty Tomato Sauce

This sauce is a delicious accompaniment to stuffed artichokes.

Olive oil
1 onion, finely chopped
3 garlic cloves, finely chopped or pressed
16 oz/465 g can Italian tomatoes
1 red chili, seeded and chopped
2 bay leaves
Salt and freshly ground black pepper


1.Heat a little olive oil in a pan and fry the onion and garlic until transparent. Add the tomatoes, chili, bay leaves, salt and pepper and cook until reduced to a good sauce consistency, 20 to 30 minutes.
