Mushrooms With Parmesan Cheese
This robust side dish features mushrooms and Parmesan cheese. Fresh herbs and spices deepen the flavor of this hearty vegetable combination.
1 pound fresh button mushrooms, stems removed
1 tablespoon cold water
3 tablespoons freshly grated Parmesan cheese
1 tablespoon chopped fresh parsley (or Italian leaf parsley)
1 large clove garlic, minced
½ teaspoon coarse salt
½ teaspoon dried oregano leaves
¼ teaspoon freshly ground pepper
¼ teaspoon fresh thyme leaves (or ¼ teaspoon dried thyme leaves)
3 tablespoons extra virgin olive oil
Preheat oven to 350 degrees F. Place the mushrooms, stem side up, in a baking dish large enough to hold them in a single layer. Pour the water around the mushrooms.
Combine the cheese, parsley, garlic, salt, oregano, pepper, and thyme in a small bowl and blend well. Sprinkle the cheese mixture over the mushrooms and drizzle with olive oil. Bake for 15 minutes or until golden brown.
