Jersey Bean Soup
D’la Soupe Dé Pais

This is a traditional and most satisfying soup. Beans are a basic ingredient of many Jersey dishes and there is still a shop in St Helier near the Central Market where the different kinds of beans needed for local recipes are displayed in bowls in the window. Some farmhouse versions of this recipe include a roughly chopped, medium sized leek for extra flavour. Others suggest sieving the soup before serving to give it a rich, thicker consistency.

8 oz haricot beans
2oz onion, chopped
3 pints beef stock
Salt and pepper
2 oz carrot, chopped


Serves: 6


Wash the beans thoroughly under running water and place in a heavy - based pan. Add the stock and bring to the boil. Simmer for one hour, skim and then add the other ingredients. Re-boil and then simmer for a further 30 minutes. Add seasoning and serve.
