Green Beans With Cheese And Cashews

Green beans never tasted better. Although easy to prepare, this dish is elegant enough to be served at a festive dinner.


1 pound green beans, trimmed
3 tablespoons butter
2 teaspoons curry powder
cup thinly sliced yellow onions
cup unsalted roasted cashews
1 cup shredded sharp Cheddar cheese


Serves: 4


Bring salted water to a rolling boil in a large saucepan over high heat. Add the green beans and cook for 3 minutes. Transfer the green beans to a colander and rinse with cold water. Pat dry with paper tow­els. (The green beans can be cooked in the morning. Place them in a covered container and refrigerate until ready to use.)

Melt the butter in a large skillet over moderate heat. Add the curry and cook for 1 minute or until fragrant, stirring frequently. Add the onion, cashews, and green beans and cook, stirring occasionally, for about 5 minutes or until the green beans are fork tender. Sprinkle the Cheddar cheese over the green beans. Cover for 1 minute or until the cheese melts. Lightly blend and serve immediately.
