Green Beans With Buttered Almonds

Pairing green beans and buttered almonds provides a nice contrast in flavors, texture, and color. You also can make this delectable dish with asparagus or broccoli.


1 pound green beans, trimmed
3 tablespoons butter
cup sliced almonds
teaspoon coarse salt
teaspoon freshly ground pepper


Serves: 4


Bring salted water to a rolling boil in a large saucepan over high heat.

Add the green beans and cook for 5 to 6 minutes or until crisp­tender. Transfer the green beans to a colander and rinse with cold water. Pat dry with paper towels. (The green beans can be cooked in the morning. Place them in a covered container and refrigerate until ready to use.)

Melt the butter in a large skillet over medium heat. Add the al­monds, salt, and pepper and sauté for 2 minutes, stirring frequently. Add the green beans and sauté for 2 minutes or until heated through, stirring constantly.
