Ham-Wrapped Asparagus In Cheese Sauce


24 asparagus spears
2 tablespoons water
3 tablespoons butter
cup flour
1 cups milk
cup (3 ounces) shredded Swiss cheese
1 egg yolk
⅛ teaspoon nutmeg
Black pepper to taste
Pinch of cayenne pepper
24 thin slices cooked ham
cup (1 ounce) shredded Swiss cheese


Serves: 6


Combine the asparagus and water in a microwave-safe dish. Microwave for 2 to 5 minutes or until tender-crisp; drain.

Melt the butter in a saucepan over medium heat. Whisk in the flour until smooth. Add the milk gradually, whisking constantly. Cook for 5 minutes or until thickened, stirring constantly. Remove from the heat. Add ¾ cup cheese and whisk until the cheese is melted. Stir in the egg yolk, nutmeg, black pepper and cayenne pepper.

Wrap a ham slice around each asparagus spear. Arrange in a single layer in a 9x13-inch baking dish. Pour the cheese sauce over the asparagus. Sprinkle with ¼ cup cheese. Broil 6 inches from the heat source for 5 minutes or until light brown and bubbly.
