Bouillabaisse Provençale

14-oz (400 g) monkfish fillet
2 firm medium potatoes
2 beefsteak tomatoes
½ onion
2 cloves garlic
½ bunch parsley
2 tbsp (30 ml) olive oil
2 bay leaves
Pinch ground saffron
Salt and freshly ground pepper
2 cups (500 ml) boiling water


Serves: 2


Slice the potatoes. Score, blanch, peel and dice the tomatoes. Chop the onion, garlic and parsley.

Heat the oil, stir in the onion and garlic, and lightly sauté on low heat until translucent. Add the potatoes and brown on medium heat. Stir in the tomatoes, parsley, bay leaves, saffron, salt and pepper. Cover and cook on low heat for 5 minutes.

Cut the fish into bite-size pieces. Combine with the vegetables and cook for 3 minutes. Pour in the water and simmer on medium heat for 15 to 20 minutes.

TIP:- A thinly sliced toasted baguette goes very well with this dish.
