Mixed Meat Cannelloni

Ingredients

60ml/4 tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
2 garlic cloves, crushed
2 ripe Italian plum tomatoes, peeled and finely chopped
130g/4½oz minced (ground) beef
130g/4½oz minced pork
250g/9oz minced chicken
30ml/2 tbsp brandy
25g/1oz/2 tbsp butter
90ml/6 tbsp panna da cucina or double (heavy) cream
16 dried cannelloni tubes
75g/3oz/1 cup freshly grated Parmesan cheese
Salt and ground black pepper
Green salad, to serve

For the white sauce

50g/2oz/¼ cup butter
50g/2oz/½ cup plain (all-purpose) flour
900ml/1½ pints/3¾ cups milk
Nutmeg

Method

1. Heat the oil in a medium skillet, add the onion, carrot, garlic and tomatoes and cook over a low heat, stirring, for about 10 minutes or until very soft.


2. Add all the minced meats to the pan and cook gently for about 10 minutes, stirring frequently to break up any lumps of meat.


3. Pour in the brandy, increase the heat and boil, stirring, until it has reduced. Then add the butter and cream and cook gently, stirring occasionally, for about 10 minutes, until the mixture is rich and well cooked. Allow to cool.


4. Preheat the oven to 190°C/375°F/Gas 5. Make the white sauce. Melt the butter in a medium pan, add the flour and cook, stirring, for 1-2 minutes. Add the milk a little at a time, whisking vigorously after each addition. Bring to the boil and cook, stirring, until the sauce is smooth and thick. Grate in nutmeg to taste, add salt and pepper and whisk. Remove from the heat.


5. Spoon a little of the white sauce into a baking dish. Fill the cannelloni tubes with the meat mixture and place in a single layer in the dish. Pour the remaining white sauce over them, then sprinkle with the Parmesan. Bake for 35-40 minutes or until the pasta feels tender when pierced with a skewer. Allow to stand for 10 minutes before serving with green salad.

COOK'S TIP:- Sheets of fresh lasagne can be used instead of cannelloni tubes. Spoon some of the meat mixture at one end of a piece of lasagne and roll up, then place in the dish.
