Vegetable And Rice Wraps

Ingredients

1 cup chopped broccoli
1 small tomato, chopped
3 tablespoons minced red onion
1 garlic clove, minced
3 tablespoons picante sauce
2 tablespoons balsamic vinegar
3 tablespoons fresh basil
Salt to taste
1 cup hot cooked brown rice
cup (2 ounces) shredded Cheddar cheese
2 (10-inch) whole wheat tortillas

Method

Steam the broccoli in a small amount of salted water in a saucepan. Drain and rinse the broccoli with cold water.


Combine the broccoli, tomato, onion, garlic, picante sauce, vinegar, basil, salt, rice and cheese in a bowl and mix well. Spoon an equal amount of the mixture onto each tortilla. Roll to enclose the filling, tucking in the ends. You may substitute 2 tablespoons pesto sauce for the basil if preferred.
