Wild Rice Pilau

15ml/1 tablespoon oil
Piece cassia bark
4 black cardamom pods, crushed
8 cloves
4 black peppercorns
Piece star anise
180g/6oz/ ⅔ cup long grain rice
60g/2oz/ cup wild rice
570ml/1 pint/2 cups hot vegetable stock
60ml/4 tablespoons dry white wine
60g/2oz/ cup flaked almonds
60g/2oz/ cup raisins


Serves: 4


Put the oil and the spices in a casserole and cook on HIGH for 1 minute. Stir in the rice and cook on HIGH for a further 1 minute. Add the stock, wine, nuts and raisins. Cook, uncovered, on HIGH for 12-15 minutes or until most of the liquid has been absorbed.

Stir the rice and quickly cover with a lid and leave to stand for 5 minutes before serving. 

Preparation time: 5 minutes
Microwave cooking time: 14-17 minutes plus 5 minutes standing time
