Spiced Couscous With Chicken, Prawns and Shrimp

Ingredients

225g/8oz/1 cups couscous
430ml/ pint/1 cups water
Pinch salt
15ml/1 tablespoon oil
10ml/2 teaspoons ground coriander
10ml/2 teaspoons ground fenugreek
5ml/1 teaspoon ground cardamom
2 chicken breast fillets, cubed
3 spring/green onions, sliced diagonally
120g/4oz prawns/shrimp

Garnish:

Whole prawns/shrimp

Method

Put the couscous, water and salt into a large bowl and leave to stand while cooking the chicken.


Put the oil and spices into a bowl and cook, uncovered, on HIGH for 1 minute. Toss the chicken in the oil and spice mixture, cover and cook on HIGH for 3-5 minutes until the chicken is cooked. Add the chicken and onions to the couscous (which will have absorbed much of the water) and mix well.


Cover and cook on HIGH for 5-8 minutes, stirring in the prawns/ shrimp after 3 minutes. Fluff up with a fork before serving. Garnish with whole prawns/shrimp.
