Festive Brussels Sprouts

450g/1lb Brussels sprouts
225g/8oz/1 cups fresh chestnuts, roughly chopped
60ml/4 tablespoons water
30g/1oz/2 tablespoons butter
2.5ml/ teaspoon aniseed
Freshly ground black pepper


Serves: 4


Remove outer leaves from the sprouts, if necessary, and cut a cross in the bottom of each.

Put the chestnuts in a casserole with the water and salt. Cover and cook on HIGH for 2 minutes. Add the sprouts, cover and cook for 7-8 minutes until tender, stirring once. Drain well.

Put the butter in a small bowl and cook on HIGH for 30 seconds until melted. Stir in the aniseed and pepper. Pour the melted butter over the sprouts and toss to serve.

Note: To remove the chestnut shells, cut a slit in the base of each chestnut and cook, a few at a time, on HIGH for 2-3 minutes then remove shells.
