Creamy Prawn/Shrimp Flan

120g/4oz/1 cup wholemeal/wholewheat flour
60g/2oz/4 tablespoons margarine
30-45ml/2-3 tablespoons water
30g/loz/2 tablespoons butter
30g/1oz/2 tablespoons flour
140ml/ pint/ cup milk
30ml/2 tablespoons dry white wine
90g/6 tablespoons full fat cream cheese
225g/8oz prawns/shrimp
2.5ml/ teaspoon paprika
Pinch cayenne pepper
2.5ml/ teaspoon curry powder
Freshly ground black pepper
30ml/2 tablespoons
Parmesan cheese


Chopped parsley


Serves: 4


Put the flour, salt and margarine into a mixing bowl and rub in the fat until the mixture resembles fine breadcrumbs. Gradually add the water and mix to form a soft dough. Roll out the pastry and line a 20cm/ 8 inch flan dish. Prick the base with a fork and cook, uncovered, on HIGH for 2-4 mins, turning during cooking.

Put the butter in a small bowl and cook on HIGH for 45 seconds to melt. Add the flour, mix well and cook on HIGH for a further 1 minute. Add the milk, wine and cream cheese. Whisk, then cook on HIGH for 2-3 minutes until thickened, whisking occasionally.

Add the remaining ingredients and mix well. Pour into the pastry case. Chill through to serve cold, or serve hot by cooking, uncovered, on HIGH for 3-4 minutes. Sprinkle with chopped parsley.
