Cheese And Tomato Pasta

15ml/1 tablespoon oil
1 medium onion, peeled and finely chopped
120g/4oz mushrooms, finely sliced
15ml/1 tablespoon tomato purée/paste
1 x 285g/10oz can tomatoes
30ml/2 tablespoons fines herbes
90g/3oz strong Cheddar cheese, grated
15ml/1 tablespoon Parmesan cheese
225g/8oz tagliatelle
850ml/1½ pints/3 cups boiling water


Serves: 4


Put the oil in a medium bowl with the onion and cook on HIGH for 2 minutes until softened. Add the mushrooms, tomato purée/paste and tomatoes and mix well, breaking up the tomatoes slightly. Cook, uncovered, on HIGH for 4-5 minutes or until boiling. Cook for a further 3-4 minutes until reduced slightly.

Stir in the herbes, grated cheese and Parmesan. Cover and keep warm. Put the pasta and the water in a large bowl. Cover and cook on HIGH for 8-10 minutes or until the pasta is cooked. Drain and arrange on a serving dish. Reheat the sauce on HIGH for 1-2 minutes if necessary, and pour over the pasta to serve.
