Sardine Spreading Pâté

2 120g/4oz cans sardines in oil
30g/1oz/2 tablespoons flour
2.5ml/ ˝ teaspoon ground cumin
2.5ml/ ˝ teaspoon ground fenugreek
5ml/1 teaspoon ground mild chili powder
140ml/ Ľ pint/ ˝ cup milk
Freshly ground black pepper
140ml/ Ľ pint/ ˝ cup natural yogurt
15ml/1 tablespoon lemon juice


Serves: 8


Drain the sardines, reserving 30ml/ 2 tablespoons of the oil. Put the oil in a bowl, stir in the flour and spices, and cook on HIGH for 45 seconds. Add the milk and season with salt and pepper. Cook on HIGH for 1-2 minutes, whisking frequently until the sauce is thickened.

Mash the fish with a fork and stir into the sauce. Stir in the yogurt and lemon juice. Pour into individual ramekins/ custard cups or one large dish and chill thoroughly before serving. Garnish with parsley. 

Preparation time: 10 minutes plus chilling time
Microwave cooking time: 1ľ - 2ľ minutes
