Lentil Curry

Serve as an accompaniment to a meat or chicken curry or as a main course for a vegetarian meal.


1 onion, chopped
2 tablespoons oil
2 teaspoons hot curry powder
250 g (8 oz) red lentils
750 ml (1 pints) hot vegetable stock
2 tablespoons mango chutney
Salt and pepper to taste


Serves: 6


Place the onion and oil in a bowl, cover and cook on HIGH for 2 minutes. Add the curry powder and cook for 1 minute.

Stir in the remaining ingredients, cover and cook on HIGH for 20 minutes. Check the seasoning, stir well then transfer to a warmed serving dish.

Cooking time: 23 minutes
