Veal Chops With Red Pepper Sauce

4 veal chops
Microwave seasoning
1 small onion, chopped
2 red peppers, cored, seeded and chopped
1 clove garlic, chopped
150 ml ( pint) light stock
2 tablespoons oil
Salt and pepper to taste
Snipped chives to garnish


Serves: 4


Sprinkle the chops with the microwave seasoning and set aside.

Place the onion in a bowl, cover and cook on HIGH for 2 minutes. Add the red pepper, garlic and stock, cover and cook on HIGH for 10 minutes. Leave to stand for 10 minutes.

Meanwhile, heat a browning skillet on HIGH for 8 minutes. Pour over the oil and heat for 2 minutes.

Place the veal chops on the skillet and cook on HIGH for 6 minutes on each side.

While they are cooking, place the red pepper mixture in a blender or food processor and work until smooth. Season with salt and pepper if necessary. Reheat the sauce on HIGH for 2 minutes just before serving.

Pour the red pepper sauce over the chops and garnish with chives. Serve with mangetouts.
