Prawns Provençale

500 g (1 lb) ripe tomatoes, skinned, seeded and chopped
1 tablespoon olive oil
1 small onion, chopped finely
1 clove garlic, crushed
1 teaspoon chopped basil
1 tablespoon tomato purée
250 g (8 oz) peeled prawns
1 tablespoon chopped red pepper
Salt and pepper to taste
Basil leaves to garnish


Serves: 4


Place the tomato flesh in a bowl with the oil, onion, garlic, basil, salt and pepper. Cover and cook on HIGH for 10 minutes, stirring twice during cooking.

Place in a blender or food processor and work until smooth. Return to the bowl, stir in the remaining ingre­dients, cover and cook on HIGH for 3 minutes.

Spoon into individual dishes and garnish with basil. Serve with crusty French bread.
