Greek Vegetable Wraps


cup mayonnaise
4 (8-inch) flour tortillas
4 leaves romaine lettuce
2 tomatoes, chopped or sliced
1 cucumber, sliced
1 cup kalamata olives
4 ounces feta cheese, crumbled
Fresh lemon juice
Dried oregano


Makes: 4


Spread an equal amount of the mayonnaise over the tortillas. Layer the lettuce, tomatoes, cucumber, olives and cheese down the center of each tortilla. Sprinkle with lemon juice and oregano. Roll to enclose the filling, tucking in the ends.
