Stuffed Courgettes

Courgettes with a savoury filling make a delicious starter, vegetarian meal or accompaniment to fish or chicken.

Serves 4 as a starter or Serves 2 as a main meal

4 courgettes, halved lengthways
1 small onion, chopped
2 tomatoes, skinned, seeded and chopped
227 g (8 oz) carton cottage cheese
1 tablespoon chopped parsley
50 g (2 oz) medium oatmeal
Pinch of cayenne pepper
50 g (2 oz) Cheddar cheese, grated finely
Salt and pepper to taste
Flat leaf parsley to garnish


Using a teaspoon, scoop out the centres from the courgette halves. Sprinkle the insides of the courgette shells with salt and pepper and set aside.

Chop the courgette flesh and. place in a bowl with the onion. Cover and cook on HIGH for 3 minutes.

Stir in the tomatoes, cottage cheese, parsley, oatmeal, cayenne pepper, salt and pepper.

Wipe off the moisture inside the courgette shells with kitchen paper, then fill with the stuffing mixture. Place in a dish and sprinkle with the grated cheese.

Cook on HIGH for 9 minutes. Leave to stand for 2 minutes. Garnish with parsley to serve.
