Lemon Chicken

Ingredients
1 tablespoon oil
500 g (1 lb) boneless skinned chicken breasts, cut into thin strips
4 small courgettes, sliced thinly
2 carrots, sliced thinly
1 teaspoon grated fresh root ginger
Shredded rind of 1 lemon
5 spring onions, chopped
2 tablespoons dry sherry
2 tablespoons soy sauce
Juice of ½ lemon
2 teaspoons cornflour

Method
Place the oil in a bowl and microwave on HIGH for 1 minute, add the chicken and cook on HIGH for 2 minutes.
Add the courgettes, carrots and ginger and cook on HIGH for 3 minutes.
Stir in the lemon rind, spring onions, sherry and soy sauce, cover and cook on HIGH for 3 minutes.
Blend the lemon juice and cornflour together, stir into the dish, cover and cook on HIGH for 3 minutes, until the sauce thickens.
Serve with boiled rice and prawn crackers.
