Stuffed Cod Steaks

4 cod cutlets, each about 2.5 cm (1 inch) thick
25 g (1 oz) butter
1 small onion, chopped
50 g (2 oz) fresh breadcrumbs
1 tablespoon chopped parsley
Pinch of dried mixed herbs
1 tablespoon grated Parmesan cheese
2 tablespoons milk
Salt and pepper to taste
2 tablespoons lemon juice
Lemon wedges sprinkled with parsley to garnish


Serves: 4


Cut away the centre bone from each cod cutlet, then arrange the cutlets in a microwave dish.

Place the butter in a bowl and microwave on HIGH for 30 seconds. Add the onion and cook for 2 minutes. Stir in the breadcrumbs, parsley, dried herbs, Parmesan cheese, and salt and pepper, then add the milk to bind the stuffing together.

Spoon the stuffing into the eye of the cutlets, sprinkle with lemon juice, cover and cook on HIGH for 6 minutes.

Garnish with lemon wedges to serve.
