Plaice Rolls With Caper Sauce

8 plaice fillets, skinned
4 tablespoons dry white wine
1 tablespoon lemon juice
2 egg yolks
5 tablespoons double cream
2 teaspoons capers
Salt and pepper to taste


Serves: 4


Roll up the plaice fillets and arrange in a shallow dish in a single layer. Mix together the wine and lemon juice, season with salt and pepper, then sprinkle over the fish. Cover and cook on HIGH for 5 minutes.

Using a slotted spoon, transfer the plaice rolls to a warmed serving dish and cover with foil to keep warm. Reserve the fish liquor.

Beat the egg yolks and cream together in a small bowl, then stir into the fish liquor. Add the capers, then cook on HIGH for 2½ minutes, stirring every 30 seconds.

Pour the sauce over the fish and serve immediately.
