Macaroni Cheese With Bacon

Ingredients

175 g (6 oz) macaroni
175 g (6 oz) streaky bacon, derinded and chopped
25 g (1 oz) butter
3 tablespoons plain flour
600 ml (1 pint) milk
1 teaspoon made English mustard
125 g (4 oz) Cheddar cheese, grated
Salt and pepper to taste

Method

Place the macaroni in a large bowl with 1.2 litres (2 pints) boiling water and a pinch of salt. Cover and cook on HIGH for 10 minutes; drain and keep warm.


Place the bacon and butter in a bowl, cover and cook on HIGH for 5 minutes. Stir in the flour, then gradually add the milk. Cook on HIGH, uncovered, for 4 minutes, stirring every minute.


Stir the mustard and 75 g (3 oz) of the cheese into the sauce and season with salt and pepper. Fold the macaroni into the sauce, then pour into a casserole.


Sprinkle over the remaining cheese and cook, un­covered, on HIGH for 6 minutes.


Brown under a hot grill if desired.
