American Pancakes With Grilled Bacon

Ingredients

175g/6oz/1 cups plain (all-purpose) flour, sifted
Pinch of salt
15ml/1 tbsp caster (superfine) sugar
2 large eggs
150ml/ pint/⅔ cup milk
5ml/1 tsp bicarbonate of soda (baking soda)
10ml/2 tsp cream of tartar
Oil, for cooking
Butter
Maple syrup
Crisply grilled (broiled) bacon, to serve

Method

1. To make the batter, mix together the flour, salt and sugar. In a separate bowl, beat the eggs and milk together, then gradually stir into the flour, beating to a smooth, thick consistency. Add the bicarbonate of soda and cream of tartar, mix well, then cover and chill until ready to cook.


2. When you are ready to cook the pancakes, beat the batter again. Heat a little oil in a heavy frying pan or griddle. Drop dessertspoonfuls of the mixture into the pan, spaced well apart, and cook over a fairly high heat until bubbles appear on the surface of the pancakes and the undersides become golden brown.


3. Carefully turn the pancakes over with a palette knife or fish slice (metal spatula) and cook briefly until golden underneath, then transfer them to a heated serving dish. Top each pancake with a little butter and drizzle with maple syrup. Serve with grilled bacon.
