Steamed Pomfret

1 white pomfret
cup pork belly, cut into thin strips
5 shrimps
cup pickled cabbage, cut into pieces
3 spring onions, (white part only)
cup young ginger, finely shredded
1 red spur chili, finely sliced
1 tbsp fried chopped garlic
1 tbsp salted dried cabbage
1 tbsp light soy sauce


Wash the fish, slit down the middle, remove the insides and gills. Slit diagonally on both sides.

Wash the shrimps, shell and de-vein. Remove the heads, but keep the tails intact.

Arrange pork belly, pickled cabbage and shrimps over the fish, sprinkle spring onion, ginger and salted dried cabbage on top. Finally, pour on the light soy sauce.

Steam over boiling water on high heat for 20 minutes, or until done.

Remove from heat, sprinkle with spur chili and fried garlic before serving and garnish with fresh vegetables as preferred.
