Central American Beef And Salad Wraps

Ingredients

2 cups shredded cabbage
2 plum tomatoes, seeded and finely chopped
3 tablespoons minced cilantro
2 teaspoons fresh lemon juice
1 tablespoon corn oil
Salt to taste
Pepper to taste
20 corn tortillas
1 pound shredded cooked beef
Pickled cherry peppers or banana peppers, sliced

Method

Combine the cabbage, tomatoes, cilantro, lemon juice, corn oil, salt and pepper in a bowl and mix well. Wrap the tortillas in plastic wrap. Microwave on High for 30 seconds or until warm.


Spoon 1 tablespoon of the beef onto each tortilla. Top with the cabbage mixture and peppers. Roll to enclose the filling, tucking in the ends.

THIS RECIPE CALLS FOR PLUM TOMATOES BECAUSE THEY ARE THE DRIEST IN TEXTURE. A WET TOMATO WILL SEEP INTO THE TORTILLAS, CAUSING THEM TO BECOME SOGGY. YOU MAY USE ANY TOMATO IF YOU SQUEEZE OUT THE SEEDS BFFORE CHOPPING IT.
