Shredded Cabbage With Orange And Caraway

1 small cabbage
30 g (1 oz) butter
2 teaspoons olive oil
1 teaspoon caraway seeds
Grated rind of an orange
Salt and pepper
Shredded orange rind to garnish


Serves: 8


1 Roughly shred the cabbage, discarding the stalk. Cook in boiling salted water for 2 minutes then drain thoroughly.

2 Melt the butter in the cleaned saucepan with the olive oil. Add the caraway seeds and grated orange rind and stir.

3 Add the cabbage and cook gently for 1-2 minutes, until heated through. Season lightly with salt and pepper.

4 Transfer to a warmed serving dish and serve garnished with shredded orange rind.

COOK'S TIPS:- Use a cabbage with deep green leaves. fennel, sesame, sunflower or pumpkin seeds can be used too.
