Okra Spicy Salad

7 okra, sliced diagonally
6 small Shiitake mushrooms, soaked and blanched
cup fried cashew nuts
cup firm white beancurd, finely mashed
2 teaspoons vegetable oil


10 roasted dried hot chilies
3 roasted shallots
5 cloves roasted garlic
2 teaspoons palm sugar
2 tablespoons light soy sauce
2 tablespoons lime juice


Remove any burnt skin from the shallots and garlic, place in motar with roasted chilli and pound well. Season with sugar, soy sauce and lime juice and stir well. Fry the beancurd in oil over medium heat until golden and fragrant. Remove and set aside. Place the okra in a mixing bowl, add the chili dressing, beancurd, cashew nuts and Shiitake mushrooms and toss well. Arrange on a serving dish.
