Garlicky Courgettes And Corn

4 courgettes
250 g (8 oz) baby corn
30 g (1 oz) butter
3 garlic cloves
1 tablespoon vegetable oil
Salt and pepper


Serves: 8


1 Cut courgettes diagonally into chunks. Bring a saucepan of water to the boil. Add corn and cook for 30 seconds. Add courgettes and cook for a further 30 seconds, then drain well.

2 Thread the courgettes and corn on to metal or wooden skewers and arrange on a grill rack.

3 Melt the butter. Crush the garlic, add to the butter with the oil, salt and pepper and mix together. Brush over vegetables.

4 Cook under a moderate grill for about 5 minutes, turning frequently and brushing with more garlic butter, until golden. Serve hot.

COOK'S TIP:- If you haven't any skewers, arrange vegetables in a single layer on a foil lined grill rack. Cook as above, turning and brushing frequently with the butter.
