200 grams wing-beans
cup boiled pork, cut into small pieces
2 tbsp roasted grated coconut
2 tbsp crisp-fried sliced shallot

2 tbsp roasted chili paste
tsp salt
1 tsp sugar
2 tbsp lime juice
2 tbsp coconut milk

To make the spicy dressing: combine all the dressing ingredients and mix well. Wash the wing-beans, trimming both ends. Slice crosswise into pieces about ¼" thick. Blanch in boiling water until done, then transfer to soak in cold water to cool before draining. Combine the pork and wing-beans in a mixing bowl; before adding half of the roasted coconut and shallots. Pour the spicy dressing over the mixture and toss well. Spoon onto a bed of red cabbage and garnish with the remaining coconut, fried shallot and fried dried chili.
