Glazed Turnips With Beans

750 g (1 lb) baby turnips
Salt and pepper
125 g (4 oz) French beans
30 g (1 oz) butter
2 teaspoons caster sugar
Flat-leaved parsley, to garnish


Serves: 4


1 Trim ends from turnips and peel. Cut each turnip into 4 or 6 wedges, depending on size. Cook in boiling salted water for about 5 minutes, until almost tender then drain. Cut beans into 5 cm (2 in) lengths and cook in boiling salted water for 2 minutes then drain.

2 Melt the butter in a heavy based frying pan. Add turnips and sprinkle with the sugar.

3 Fry over a moderate heat, stirring, until the turnips begin to colour and turn glossy. Add the beans and heat through for 1-2 minutes.

4 Season lightly with salt and pepper and turn into a warmed serving dish. Serve garnished with flat-leaved parsley.
