Broccoli In Lemon Sauce


2-10 oz. packages frozen broccoli spears
1 oz. (2 tablespoons) butter
1 tablespoon flour
6 tablespoons ( cup) milk
1 teaspoon grated lemon peel
1 tablespoon lemon juice
teaspoon salt
teaspoon ground ginger


Serves: 6


Arrange the broccoli in a 1½ quart shallow heat resistant dish. Cook covered on HIGH for 14-16 minutes. Drain and set aside. Put the butter in a medium sized heat resistant bowl and heat on HIGH for 30 seconds until melted. Blend in the flour, then gradually stir in the milk.

Cook uncovered on MEDIUM for 2-3 minutes until thickened and smooth. Stir in the lemon peel and juice gradually to avoid curdling, then add the salt and ginger. Spoon the sauce over the broccoli spears and reheat uncovered on MEDIUM for 2-3 minutes until heated through.

For ovens without variable control of or more than 650 watts output, cook the sauce for 1 -2 minutes, stirring frequently. Reheat the dish for 1 minute only.
