Roast Parsnips

1 kg/2 lb parsnips, trimmed and quartered lengthways
4 tablespoons olive oil, for roasting
Salt and pepper
Chopped fresh parsley, to garnish (optional)


Serves: 8


1 Place the parsnips in a pan of boiling salted water and parboil for 5 minutes, then drain.

2 Turn the parsnips into a small roast­ing tin and pour over the oil. Turn the parsnips so that they are well coated with the oil. Season with salt and pepper and cook in a preheated oven, 180°C (350°F), Gas Mark 4, for 45 minutes until tender, basting with the oil occasionally.

3 Serve sprinkled with parsley, if liked.
