Brandy Butter

Ingredients

Makes 175 g/6 oz

75 g/3 oz unsalted butter, softened
75 g/3 oz icing sugar, sifted
Finely grated rind and juice of orange
2 tablespoons brandy


Method

1 Put the butter in a bowl and, using an electric or rotary mixer, heat until light and fluffy. Gradually beat in the icing sugar, then heat in the orange rind and juice and the brandy.


2 Turn the brandy butter into a serving bowl and chill in the refrigerator until quite firm. Serve chilled.

Preparation time: 10- 15 minutes, plus chilling
