Melon And Pawpaw Salad
1 small charentais melon
½ small Ogen or honeydew melon
1 piece of stem ginger, plus 4 teaspoons of the syrup
Grated rind and juice of 1 lime
6 tablespoons fresh orange juice
Mint leaves, to garnish
1 Cut the melons in half and remove the seeds with a teaspoon. Scoop out the flesh from both the melons using a melon baller.
2 Halve the pawpaw and remove the seeds. Cut away skin and thinly slice the flesh. Cut each fig into 6 wedges.
3 Put the prepared melons, pawpaws and figs in a bowl. Very thinly slice the stem ginger and add to the bowl.
4 Mix together lime rind and juice, ginger syrup and orange juice and pour over salad. Toss together lightly.
5 Spoon into serving dishes and garnish with mint leaves.
