Merry Mints

1 oz. (3 tablespoons) butter
2 tablespoons (3 tablespoons) milk
15 oz. packet creamy white frosting mix
teaspoon peppermint extract
Pink and green food colouring


Makes: 40


Put the butter and milk in a 1½ quart heat resistant bowl. Heat on HIGH for 1 minute until the butter melts. Stir in the frosting mix. Cook uncovered on HIGH for 1½ -2 minutes until the mixture bubbles. Stir frequently.

Add the peppermint. Divide the mixture in two, colouring one half green and the other pink. Place teaspoonsfuls of the mixture on waxed paper or non-stick vegetable parchment and leave until set.

Substitute icing sugar (confectioners' sugar) and a pinch of cream of tartar if frosting mix is not obtainable.
