Strawberry Drink


1 lemon
White sugar


Mash the strawberries and pass through a hair sieve. To each quart of pulp add the same amount of water together with 4 to 8 ozs. of sugar and the lemon juice and grated rind. Stir until the sugar dissolves, then strain again and serve with an ice cube in each glass.

The aroma of the strawberries will be intensified if a tea­spoonful of kirsch or brandy is added to the pulp and the mixture left for about thirty minutes, before adding the remaining ingredients. The amount of alcohol thus added is negligible.
