Baked Potato Boats


4 large potatoes
1 oz. (2 tablespoons) butter
8 fl. oz. (1 cup) milk
Salt, pepper
2 oz. ( cup) strong cheese, grated

Scrub the potatoes and prick thoroughly all the way through with a large fork. Cook on HIGH, arranged in a circle on a piece of absorbent kitchen paper for 16-19 minutes. Turn over halfway through the cooking time. Leave to stand for a few minutes.

Cut a thin slice from the top of each potato. Scrape out the inside, leaving a thin unbroken shell for each potato. Mash the potatoes. Stir in the butter, milk, salt and pepper and whip until the mixture is light and fluffy.

Spoon the potato mixture back into the shells. Top each potato with cheese and sprinkle with paprika. Arrange the potatoes in a circle on a paper plate and cook on HIGH for 5 minutes.

Stuffed potatoes may be prepared ahead and refrigerated if desired. Reheat on HIGH for 6-7 minutes.
