Baby Glazed Carrots

Other baby vegetables could be cooked in the same way, especially baby onions and sliced courgettes.

25 g/1 oz butter
50 g/1 lb young carrots, trimmed and quartered lengthways
Pinch of sugar
Juice of orange
Salt and pepper
Chopped fresh parsley, to garnish


Serves: 4


1 Melt the butter in a saucepan, add the carrots and sugar and season. Pour in just enough water to cover and cook gently, uncovered, for 15-20 minutes until the carrots are tender and the liquid has evaporated. Add the orange juice towards the end.

2 Serve sprinkled with the parsley.

Cooking time: 15-20 minutes.
