Gooseberry Oat Pie


1 lb. (4 cups) gooseberries
8 oz. (1 cup) granulated sugar
5 oz. (1 cups) flour
teaspoon ground ginger
1 oz. ( cup) porridge (rolled) oats
8 oz. (1 cup) brown sugar
4 oz. ( cup) butter


Serves: 8


Combine the gooseberries, granulated sugar, 1 oz. (¼ cup) of the flour, ginger and 6 tablespoons (½ cup) water in a deep heat resistant dish.

Cover with plastic film and cook on HIGH for 4 minutes. Mix the remainder of the flour, oats and brown sugar together and rub in the butter.

Spread this mixture over the gooseberries and cook uncovered on HIGH for 6-8 minutes until the topping is golden and crispy.
