Fillets Of Sole With Almonds


2 oz. ( cup) butter
1 oz. ( cup) flaked almonds
2-8 oz. Dover soles, gutted and skinned
2 teaspoons lemon juice
teaspoon salt


Serves: 2


Place the butter and almonds in a shallow heat resistant dish. Cook on HIGH for about 5 minutes until golden, stirring after 2½ minutes.

Remove the almonds and set aside. Arrange the fish side by side in the dish. Sprinkle with lemon juice and salt. Turn the fish occasionally to baste.

Cover with plastic microwave cling film and cook on HIGH for 4-5 minutes until the flesh is white and opaque. Leave to stand covered for 3 minutes before serving. Garnish with the almonds.
