Baked Marrow

Ingredients

1 medium (1 lb.) marrow (squash)
1 oz. (2 tablespoons) brown sugar
1 oz. (2 tablespoons) butter

Method

Prick the marrow well with a fork. Wrap in a piece of absorbent kitchen paper and cook on HIGH for 6-8 minutes until just tender.


Cut in half lengthwise and remove the seeds. Sprinkle sugar over the cut surfaces and dot with butter. Join the two halves of the marrow together with a wooden cocktail stick at either end and cook for a further 2-3 minutes until the sugar has melted.
