Baked Honey Apples


4 cooking (tart) apples
1 oz. (3 tablespoons) butter
2 oz. ( cup) soft (light) brown sugar
1 oz. (3 tablespoons) raisins
2 tablespoons (3 tablespoons) chopped nuts
3 tablespoons ( cup) water
1 tablespoons (2 tablespoons) thin honey


Serves: 4


Wash and core the apples and score round the middle with a sharp knife. Put the butter, sugar, raisins and nuts in a bowl and mix well. Press quarter of the stuffing into each cavity and put the apples into individual heat resistant serving dishes.

Mix the water and honey together and spoon over the apples. Cover each apple with waxed or greaseproof paper, put the dishes into the microwave oven and cook on HIGH for 6-8 minutes until tender.

Cooking times vary considerably depending on the size and ripeness of the fruit. Cooking continues after the oven is switched off, so do not be tempted to overcook.
